Outback "Bushman" Bread

The bread from Outback is often overshadowed by Red Lobster's * Cheddar Bay Biscuits *. It may take more effort than the biscuits, but it is still well worth the work.

Add 2 teaspoons of granulated sugar and 1 package (2 1/4teaspsoons) yeast to1 1/4 cup warm water.
2 cups bread flour and 1 3/4 cups whole wheat flour.
1 tablespoon cocoa
1 teaspoon salt
Here's a peek at how the yeast foams after a few minutes
2 tablespoons butter, softened. Ok, so I usually nuke mine in the microwave because I am impatient. Soo mine is usually softly melted..
After combining all the dry ingredients, make a well in the center.
In the center add 1/4 cup of honey
And 2 tablespoons of molasses.
To get the rich color of the bread, add 1 1/4 teaspoons of red food coloring, 1 teaspoon of yellow, and 1 teaspoon of blue to the yeast and sugar mixture.
Pour the yeast mixture in the well in the center of your flour.
Start mixing and incorporating the dry ingredients from the inside out.
Not long after it starts to get real doughy, you'll have to start kneading the dough by hand.
Once kneaded, form the dough into a ball and set it somewhere warm for 1-1 1/2 hours
It will have doubled after the time elapsed. If it hasnt doubled, you may need to start over because the yeast may not have activated correctly.
Separate dough into 6 even portions.
May be kinda silly, but its nice to actually have something made/produced here in town.
Lay out a little corn meal onto your work surface. Roll your 6 portions into mini-loaves.

Rub a little water on the bottom and gently roll in the corn meal.

Carefully tap off excess corn meal.

Arrange your loaves on your baking sheet

Cover with plastic wrap and set in a warm place for another hour.

Uncover- they will have risen a little more- and bake at 350 degrees for 35-40 minutes.

They may not look exactly like at the restaurant...
But they sure eat the same =)

Garlic Cheese Bread - The Cheaters Way

Last week I wanted to get the kids a yummy snack...but to be honest I didnt want to put a whole lot of effort or time into it or just open a box of some processed snack. With how much they all love pizza and how much I hate the mess of the sauce most times, I met it in the middle!

You simply take one store bought pizza crust
Cover it with as much cheese as you would like. I just used mozzarella.
Sprinkle on some garlic salt. ( I still use Lawry's)
Place in an oven at 350 degrees for 6 minutes. To brown up the cheese just a little I turned the broiler on low for about 3 minutes.
Then it's all done!You can cut it anyway you want. Shake some Parmesan cheese on there, anything!The possibilities are pretty endless. =)

Cheddar Bay Biscuits

One recipe that I have been asked for the most are Cheddar Bay Biscuits...better known as Red Lobster Biscuits. I finally decided its only fair to finally share!! ;)

4 tbsp cold butter. You can either cut up your butter into pea sized bits....

Or you can use a pastry cutter to "cut" the butter into pea sized bits in 2 1/2 cups of Bisquick.
Add a heaping cup of shredded cheddar cheese.
Next add 1/4 tsp garlic powder. (Yeah, I usually use a wee bit more than that.)
Start with 3/4 cup milk. You can add a little at a time after that until it mixes. I usually end up using a smidge over a cup.

You could probably get more out of a regular batch...but I'm not going to want to have to keep going back for more when it comes to these. =)
Put in oven preheated at 400 degrees for 15-17 minutes.
In the mean time you can prepare what you'll brush on top of the finished biscuits.
This I dont actually measure... but it's safe to go with 2-3 tbsp butter.
Approx 1/2 tsp garlic powder, 1/4 tsp parsley flakes, and a pinch of salt. (I never thought it would, but the parsley makes sooo much difference!! And as before, I use a little more garlic.)
Melt- about 15-20 seconds in the microwave.
Almost ready...
Ohhhh yeaahhh...Couldnt even refrain from immediately taking a bite!

This could also be made in loaf form. Simply dump the whole ball of dough in a loaf pan. Its been quite some time since I've made it this way, but I started with the 15-17 minutes and then added time until it was done. You can then brush the garlic butter topping over the loaf or save it for each individual piece.

One last thing!! This I have very successfully made gluten free. All you have to do is swap your regular Bisquick for the GF Bisquick. You also swap butter for shortening I believe. My dad usually gets pretty excited when I make some for him!!

Gettin' Beer Bread Wasted

Ok, so obviously you cant get "wasted" or "buzzed" from a bread, but it can certainly put me in a light daze for a bit. : ) I've seen multiple variations of a simple beer bread recipe and finally just put together my own. Now that alcohol sales are permitted in our town, I am so ecstatic to not have to plan a trip to one of the surrounding counties to make this now!! (Dont be worried, the actual "alcohol" cooks out and you're simply left with the flavor.) I am sooo not a fan of drinking beer myself, but give this bread a shot if you dont either.


3 cups of sifted Self Rising Flour



1/2 cup sugar



1 Stick (1/2 cup) butter. Melt in small bowl or measuring cup.



12 oz of your favorite beer. (1 regular can) Each type of beer will give a slightly different flavor. I use Busch just because that's just what was around the first time, and when I find something I like, I usually wont change it!



Mix all four ingredients together well. I use a little over 1/4 cup of the butter in the mix and reserve the rest for later.





Pour dough into greased loaf pan. Try to get it even and to the edges.

Put in preheated oven (350 degrees) for 50 minutes.



Pour remaining butter evenly over top and put it back in the oven for 10 more minutes.



Give it a few minutes to cool. Using a serrated knife cut yourself a slice. I slather it up with some butter and let it get all melty. It has become my favorite breakfast: Chai latte with a big slice of buttered beer bread. : ) Yumminess!!

I have attempted a gluten free version of this for my dad...and it turned out soooo strange!! It was the heaviest, weirdest textured thing I've ever made!! But it is on my agenda to try again at it. There are specific gluten free beers that you will need to use. I got two different kinds at Whole Foods.
